Börek (Turkish Pastry with Cheese)

Ingredients:
- 1 package of phyllo dough (about 16 oz)
- 2 cups feta cheese, crumbled
- 1 cup ricotta cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 1 egg (for egg wash)
- Salt and pepper to taste
Instructions:
- Prepare the Filling: In a bowl, mix feta cheese, ricotta cheese, parsley, salt, and pepper until well combined.
- Layer the Phyllo: Preheat the oven to 375°F (190°C). Lay one sheet of phyllo dough on a clean surface and brush with olive oil. Layer another sheet on top and brush again. Repeat for 4-5 sheets.
- Add Filling: Place a portion of the cheese filling along one edge of the phyllo. Roll tightly to form a log. Place on a baking sheet lined with parchment paper.
- Egg Wash: Beat the egg and brush it over the top of the rolled börek.
- Bake: Bake for 30 minutes until golden brown. Let cool slightly before slicing.
Presentation Tips:
- Serve warm, cut into slices or wedges.
- Garnish with fresh herbs or a side of yogurt.
