Ingredients:
- 4 large eggs
- 2 medium tomatoes, diced
- 1 green bell pepper, diced
- 1 onion, finely chopped

Instructions:
- Prepare the Vegetables: Heat olive oil in a skillet over medium heat. Add the chopped onion and bell pepper, sautéing for about 5 minutes until soft.
- Add Tomatoes: Stir in the diced tomatoes and cook for another 5-7 minutes until they break down and form a sauce. Season with salt and pepper.
- Cook the Eggs: Crack the eggs directly into the skillet. Stir gently to combine with the vegetables, cooking until the eggs are just set (about 3-4 minutes).
- Garnish and Serve: Remove from heat, garnish with fresh parsley, and serve hot with crusty bread.
